recipes tested in my own kitchen (๑˃ᴗ˂)ﻭ these are stored here for my own reference, but feel free to try them out too! i usually adjust the recipes i found online to my own taste, then i keep forgetting how much i added last time TT
recipe roulette
can't decide what to bake? let fate choose
no-bake tiramisu (my specialty!!)
⏱ 30 min + 1 napeasy-ish
dangerously easy to inhale in one sitting.
you'll need
500ml mascarpone (room temp) (i usually get them from ikh nayd)
470ml heavy cream (cold)
6 egg yolks
70g sugar
1 pack ladyfingers
strong coffee
cocoa powder, for the dusting
how to
whisk yolks + sugar until pale & fluffy, fold in mascarpone.
whip the heavy cream. Then fold it into the mascarpone mixture
dunk ladyfingers in coffee — quick dip! soggy = sad.
layer: biscuits, cream, biscuits, cream. repeat until dish is full.
chill 4+ hrs (overnight = best). dust cocoa right before serving.
📝 my heavy creams have sugar in it so i dont add that much sugar to the mixture
Ladyfingers for tiramisu
⏱ 30 mineasy-ish
you'll need
3 egg whites
3 yolks
1/4 tsp salt
vanilla extract (1 tsp)
80g sugar (40g for yolks, 40g for whites)
120g flour
5tsp corn starch
sugar powder, for the dusting
how to
beat the egg yolks with 40g sugar, salt, and vanilla until fluffy.
beat the egg whites while gradually adding 40g sugar until stiff peaks form
beat the egg yolks again for a few seconds to make sure they're still fluffy.
gently fold the egg whites into the yolk mixture.
sift the flour and corn starch and gently fold until just combined a several times
transfer to a piping bag and pipe onto a baking sheet lined with parchment paper.
dust with powdered sugar and bake at 180°C for 12–15 min. let cool before using.
📝 so better than store bought ladyfingers.
Brownies (a little caky)
⏱ 30 mineasy-ish
you'll need
110g butter
100g dark chocolate
3 eggs
80g sugar
40g brown sugar
1 tsp vanilla extract
65g flour
25g cocoa powder unsweetened
1/4 tsp salt
1/4 tsp baking powder
optional: 50g chocolate chips
how to
melt butter and chocolate together, let cool slightly.
beat the eggs with both sugars and vanilla until its fluffy.
add the melted chocolate mixture to the eggs and mix until combined.
whisk the flour, cocoa powder, salt, and baking powder together in a separate bowl.
sift the dry ingredients to the chocolate mixture
fold in chocolate chips if using.
put in the oven and bake at 170°C for 26 min.
📝 i love caky brownies so i add a little bit of baking powder.
